Meal Plan: Week of 5/4/25
I'm back! And feeling... uninspired? Here's what I *think* I'm gonna make. What sounds good?
Sunday Dinner:
Za’atar Chicken and Couscous with Olive Salsa — I have half a jar of castelvetrano olives left and this is a great recipe. Crispy chicken skin and schmaltzy couscous.
Weekday Lunches:
Either Herby Tahini Grain Bowl or Lentil Salad with Green Tahini by Love & Lemons (shown below). I’m super ready for a new season of produce and spring is just *barely* here, according to the market :) Edamame is a great backup when I’m ready for spring but the market isn’t quite yet.
Taco Salad with Chipotle Dressing — You can kinda do whatever you WANT for a taco salad — corn, beans, tomatoes, lettuce, cheese, onions, meat or TVP — but the dressing here is a fun one.
Weeknight Dinner:
3-Ingredient Broiled Miso-Mirin Sablefish — Quick and so tasty, I found this when I needed dinner in a pinch and all I had was (frozen) sablefish, thanks to mom/Aldi :) Great with plain rice and a fresh salad. (TIP: How to cook fish from frozen.)
Creamy Tuscan Salmon — this one has been in our rotation since RIGHT after I got into cooking. It’s easy, it’s super cravable, and that’s really all you need to know about it :)
Salad, salad and more salad! Actually the chicken with couscous and olives sounds good. Could try to make with a package of Daring chicken I have in the freezer!
